I had a piece of Tandoori Chicken leftover from last night. We always have a bit of Roast Chicken leftover, don’t we ? & if you don’t, then make a little extra next time, just so that you can try this recipe, for a quick snack the next day. 

I decided to shred the chicken & make a spicy Sandwich with it. 

So on a slice of fresh white sandwich bread, I slathered some Mayonnaise, & piled the shredded chicken on it. 

On another slice I spread some spicy green chutney, & onion slices, with a generous squeeze of lemon.You could also add a cheese slice to make it yummier. 

I grilled the sandwich with a small dollop of butter on top, till golden and crisp. 

The spicy chutney, and tandoori chicken, with the creamy mayonnaise tasted SO good ! 

Next time I’m gonna save a piece or two of chicken, just to make this sandwich the next day ๐Ÿ˜œ 

* You can roll up the same ingredients in a Chapati, instead of using Bread. Cook till golden brown, with a dollop of butter, on a frying pan. *

Ajwain (Carom seed) Purisย 

Ajwain (carom seed) Puris – 

A very simple unleavened Indian flatbread. There are many variations of this flatbread, depending on the region where they are made.

 This is a simple recipe which requires just a few ingredients & can be made in under half an hour. 

โ–  In a large mixing bowl, combine 1 cup Whole Wheat Flour, 2 Tablespoons of Semolina, 1/2 Tsp Ajwain (Carom Seeds), 1/4 Tsp Turmeric powder, 1-2 Garlic flakes -minced /grated (optional) , Salt & Chilli powder to Taste.

โ–  Knead all the above ingredients into a stiff dough, using water as required (little at a time) Set aside for 15-20 mins. 

โ–  In a wok, heat oil. Roll out small (lemon sized) dough balls into flat Puris. (As shown in the pic) Deep fry the puris in hot oil, on medium heat, till they get a golden hue, & are fully puffed up. 

I serve these hot fluffy crisp Puris with a Mint-Coriander-Green Chilli Chutney, and some plain yogurt for Breakfast.

You  can also serve as a hearty meal along with Palak Paneer, Chickpea or Potato Curry.

It’s been raining non stop, & the weather’s so nice & cool. Perfect for a day long Baking session. I made grand plans for the day! 

First up, kneading the bread dough, as it would take the longest to ferment. That done, I left the sourdough to ferment. Then got on with marinating some chicken, which I later planned to bake along with thin slices of potato, onion, cream & cheese. Marination done, I turned to the fermented dough, shaped & scored  a lovely french baguette, & put it in the oven to bake. 

Within 20 minutes the aroma of freshly baked bread was wafting through the kitchen. So now it was the Chicken that had to go in, to bake. Layers of thinly sliced potatoes, onion, chicken, herbs, cream & cheese were all set to bake & turn into a magical dish, which would later be devoured while listening to the pitter patter, sitting by the french window. 

I poured myself a glass of wine, & settled for a bit, waiting for the chicken to be ready in another 20 mins….

And then….BAM ! ๐Ÿ˜‘ *power cut * 

How could I be SO naive & optimistic about this ‘Baking on a Rainy Day Plan’ ?! 

This is #pune ! Even 10 mins of rain, results into hours of powercut ! Hmmph… 

But I wasn’t gonna let my plans be ruined, just bcoz this brilliant ‘Smart City’ decided to cut off power suply! ๐Ÿ˜ 

So out came the next best thing – the Cheese Board ! 

Now how can you go wrong with a Cheese Board & Wine ?! 

* That’s why I always say – Stock up your groceries smartly * 

I had all the essentials of a Cheese platter ready, & all it took was a little assembling. 

So within minutes we had – Olives, Parmesan, Gruyere Crisps, Mild Cheddar, some Fruit Preserves, Spanish Chorizo, & the lovely fresh warm baguette ready, for a candlelight evening by the window, listening to the pitter patter of the rain, sipping wine & having an awesome evening. 

Well played ‘Smart City’….But I’m smarter than you ๐Ÿ˜๐Ÿ˜Ž๐Ÿ˜‚

Healthy, No Cook Breakfast Ideas. Banana-Peanut Butter-Granola.ย 

Imagine the saltiness of generously slathered creamy peanut butter against the sweetness of banana and the crunchy texture of homemade granola packed with Almonds, Walnuts & Cranberries !

That was my breakfast today ๐Ÿ˜ 

You don’t need to slave in the kitchen for hours, neither skip breakfast bcoz you don’t have time to cook.

I just slit a banana lengthwise,  slathered some creamy peanut butter on it, & genrously sprinkled my favourite homemade granola packed full of the goodness of Oats, Almonds, Walnuts, & Cranberries. 

There you have it, a complete breakfast full of all the essential nutrients to start your day, ready in under 5 minutes, without any cooking at all ! 

Can anything be easier than that ? 

 Just use a little imagination ! Experiment a little.

Quick & Easy Paneer- Capsicum Curryย 

โ€‹The fastest & simplest way to make a Paneer-Capsicum-Onion dish, that tastes fabulous with steamed rice/laccha parathas/hot phulka. 

I used my favourite ‘Feel Good’ brand of #paneer that I bought from Dorabjee’s 

Here’s what you need to do – 

โ–  In a pan take a spoonful of Ghee, and add Kalonji (nigella seeds/onion seeds) to it. 

โ–  Once the seeds start to sizzle a bit, add diced onion, and capsicum, pinch of turmeric, salt, ‘Kitchen King’ masala & red chilli powder to taste, and toss on high flame for just a minute (the vegetables should remain crunchy) 

โ–  Add a little whisked yogurt, and stir in till combined well. Lower the heat at this point. 

โ–  Add cubes of Paneer, and stir gently till combined. Do not overcook Paneer, as it becomes chewy. Add water/milk/cream, as per your choice, to adjust the consistency. 
Serve the dish with fresh steamed rice/paratha/phulka. 

Quick Fried Riceย 

โ€‹This one dish meal works wonders when you have a cup of leftover cooked rice and want to rustle up a quick meal on a busy work day. 
This literally takes the same amount of time it would need to cook a packet of Instant Noodles. (ok… maybe a minute more, to mince and chop the veggies…. but so much more nutritious than a pack of junk food)
I generally stock up a few bottles of Soy Sauce, Fish Sauce, and Curry Pastes to instantly jazz up boring veggies and meats.

You can use any meat/veggies you have at home, as there are no set rules for this recipe. 

So don’t be lazy, and try this simple recipe next time you have the urge to just pop a ‘ready to eat’ packaged meal in the microwave. 
โ— In a wok, heat a tsp of Sesame Oil (any other oil would do) Add in minced Ginger & Garlic,  Soy Sauce, (Fish Sauce- optional), Black Pepper/Chilli Flakes. 
โ— Add lightly whisked Egg (/Sausages/Bacon) and any of the following veggies – Pak Choi/ Bok Choy /Mushrooms /Cabbage/ Spring Onion. Add Salt to taste.

Saute on high heat for couple of minutes.

โ— Add in the cooked rice (should be cold/room temperature) and toss it just enough, so that all ingredients mix well. Serve hot. 

My Favourite Stir Fried Chicken, Super Healthy, Super Quick !

‘Stir Frying’ is a cooking technique in which ingredients are fried in a small amount of very hot oil, while being stirred continuously in a wok.
This quick stir fry is not just super delish but also extremely healthy, and can be made in a matter of minutes !

Ingredients –

Boneless Chicken (bite sized pcs)- 250 gms
Garlic (finely chopped) – 5 cloves (approx)
Green Chilli (finely chopped) – as required
Soy sauce – 2 tsps
Honey – 2 tsps
Sesame Oil – 2 tsps
Flax Seeds – 2 tsps
Sesame Seeds – 2 tsps
Sunflower Seeds – 2 tsps
Onion (bite sized pcs) – as required
Bell Pepper (bite sized pcs) – as required
Salt – to taste

Method –
* In a wok, add sesame oil and heat it well.
* Add finely chopped garlic & green chilli and saute till garlic is light golden in colour.
* Add Soy Sauce and Salt to taste (be careful while adding salt, as soy sauce already has enough salt in it)
* Now add bite sized chunks of boneless chicken and stir continuously on high flame.
* Once chicken is Half cooked (which takes about 2 – 3 mins) add Honey, Onion, and Bell Pepper/Capsicum.
* Add Sesame, Sunflower & Flax Seeds and keep stirring for 2-3 minutes till the honey and soy sauce coats all Ingredients and the chicken has a shiny glaze on it.
* Do not overcook the chicken. This dish does not need more than 10 minutes of cooking time.
* Garnish with Parsley/SpringOnion/Corriander and serve hot.

# For Vegetarian/Vegan options-
You can Use Paneer (Cottage Cheese), Tofu, Oyster Mushrooms, Portobello Mushrooms, Button Mushrooms, Soy Nuggets, Broccoli,  Baby Corn, or any other vegetables of your choice.

This can be eaten as a one dish meal, or you can have it with steamed rice as well.

Packed full of flavour and nutrition, ready in 10 minutes, and super tasty! This dish is perfect for people who have very little time to cook, but want to have healthy, delicious meals.
